I only heard about Sloppy Joe after I went vegan. The funny name piqued my curiosity, but not beyond that. I made my own version only after Gad told me he had it at Goodness.

RECIPE
Vegan Sloppy JoeA protein bomb in a bun: Toast a bun, spread vegan mayonnaise and sriracha, place strips of moong dal omelet, top with curly lettuce or rocket, and a generous pile of delicious vegan minced mixture. One bite, and you're in!
Servings
Ingredients
- ½ Kg BeeFree mass prepared according to the instructions. or any vegan minced
- 1 onion, chopped
- ½ red bell pepper, finely chopped
- ¼ cup ketchup or by taste
- 1 Tablespoon sriracha mayo sauce or any hot sauce by taste
- 1 tsp brown sugar
- 1 tsp Dijon mustard
- ½ tsp liquid smoke
- ¼ tsp Ras El Hannut
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp smoked paprika
- salt, and black pepper by taste
- 4 Long spelled rolls halved lengthwise. or 6 hamburger buns halved crosswise
- 4 Moong dal omelet with a diameter of about ten cm each (4-inch) optional
- Curled lettuce leaves or rocket leaves
For Spreading
- vegan mayonnaise
- sriracha mayo sauce or any hot sauce
Instructions
- Mix the vegan minced with chopped red bell pepper.
- Heat a large skillet over medium heat, add 1-2 tablespoons of oil and chopped onion, reduce to a medium-low flame, and fry until the onion caramelizes.
- Add the minced mixture to the pan, increase the heat, and cook while stirring for a few minutes until the mixture begins to brown. Lower the heat and add ketchup, sriracha, mustard, sugar, liquid smoke, and spices. Add salt and black pepper to taste.
- Cook for about ten minutes and stir occasionally. Taste and adjust seasoning if necessary.
- In the meantime, you can prepare a vegan omelet (like the moong dal omelet as in the picture—recipe coming soon).
For Serving
- Toast the buns and spread vegan mayonnaise and Sriracha sauce.
- Cut a vegan omelet in half and arrange on the bun, top with curly lettuce or rocket leaves, and pile the minced mixture on top – be generous with yourself 😊
