Let’s start with a confession: I’ve always had a soft spot for eggs benedict.
Even during my advanced vegan phase, I’d occasionally crave that rich, comforting dish.
Confession time – yes, there were some slips 😅

But time passed, and my vegan roots grew deeper. Then one day – magic happened:
A vegan poached egg emerged into the world (homemade version coming soon!).
Right after, my son sent me a photo of a vegan eggs benedict he ate at Goodness, raving about the hollandaise sauce.

Boom – creative sensors ON.
In a moment of inspiration, the recipe came together:
a golden vegan yolk sauce, lemon juice, a hint of mustard – and the rest is history.

We went crazy for it at home – on vegan eggs benedict, steamed asparagus, roasted and boiled veggies...
In every version – it was nothing short of wow.

RECIPE
🌱 Vegan Hollandaise Sauce – Light, Velvety, and Irresistibly Good! 💛- 75 gram vegan butter ⅓ cup
- 2 tablespoon nutritional yeast flakes
- ½2 teaspoon corn starch
- ⅛ teaspoon ground turmeric
- pinch paprika
- pinch white pepper
- 1 cup almond milk or soy milk
- 1 teaspoon lemon juice
- ½ teaspoon Dijon mustard
- salt by taste
- pinch black salt (Kala Namak) optional, by taste
- Melt butter over low heat, add nutritional yeast, cornstarch, turmeric, paprika, and white pepper. Mix well until smooth.
- Increase to medium heat, gradually add the milk, stirring constantly. Cook until thickens.
- Add lemon juice, mustard and salt and mix well until smooth and creamy. Remove from heat, taste and adjust seasoning if necessary and serve immediately.
- If you're serving it later, keep it warm. If the sauce thickens a bit, just add a splash of warm or room-temperature water and stir until it’s back to the right consistency.
- This vegan hollandaise sauce is perfect on vegan eggs Benedict (recipe coming soon), steamed or roasted veggies, and baked potatoes. You can even dip pieces of vegan sausage in it—really, just about anything—depending on your taste and imagination.
