Originally, this was an orange cake made with egg yolks and whites. I’ve learned that whipping egg whites is often unnecessary; combining baking soda, plant-based milk, and apple cider vinegar does an excellent job. Since I had some tangerines in the fridge, I thought this could be a nice change.
So I sliced the tangerine into segments, cut each into four, removed the pits, and rolled them in cornstarch.
I mixed olive oil, sugar, and applesauce in a deep bowl, added milk, apple cider vinegar, and extracts, and mixed in the tangerine.
I sifted flour into a bowl, added baking powder, baking soda and salt and mixed until combined.
I poured the batter into a greased and floured pan, baked it for forty-five minutes, cooled it, and sprinkled it with powdered sugar. The result was a tall, fluffy cake with a crispy crust and a surprise of fruit pieces inside.

Clementine Cake VeganEQUIPMENT
- ½ cup sugar
- 113 gram apple sauce unsweetened
- ½ cup olive oil
- 1 tsp orange extract or zest from one orange
- 1 tsp pure vanilla extract
- ¾ cup un-sweetened plant based milk
- 1 Tablespoon apple cider vinegar
- 1 large clementine or one small orange
- 2 Tablespoon corn starch or tapioca starch
- 2 cup all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt

- powdered sugar optional
- Preheat oven to 170 degrees Celsius, 338 Fahrenheit
- Grease and flour a 20-21 cm diameter pan, cover the bottom of the pan with a circle of baking paper and brush the paper with oil as well.
- Peel the tangerine, cut into segments, cut each segment into four pieces and remove the pits.
- Put the cornstarch or tapioca in a small bowl, roll the tangerine pieces, and set aside.
- In a deep bowl mix sugar, applesauce, oil, orange extract or zest, and vanilla extract.
- Add milk and vinegar and mix well; add the tangerine pieces coated in cornstarch and mix well.
- Sift the flour into a bowl, add baking powder, baking soda, and salt, and mix until combined.
- Pour the batter into the greased and floured pan, level with a spatula, and bake in the center of the oven for 40-45 minutes until a wooden skewer or toothpick comes out clean.
- Place the cake on a wire rack and let it cool completely.
