These chocolate coconut muffins are so easy to make—and so delicious!!! They have a fluffy, flexible texture, mild sweetness, and a distinct chocolate flavor.
Preparing the coconut chocolate muffins is easy:
Sift the dry ingredients.
Melt chocolate and olive oil in the microwave and transfer to a separate bowl. Add two cups of plant-based milk (no, there is no mistake), sugar, apple cider vinegar, and flavor extracts, and combine with the dry mixture.
Transfer to a muffin pan and decorate with chocolate chips.
I’m fond of the crown muffin pan, which yields beautiful muffins that are easy to take out, thanks to its silicone coating.
As always, you will know the muffins are ready when a toothpick or skewer inserted in the center comes out clean.
Take out, leave to cool on a wire rack. Do not remove from the pan before the muffins have cooled completely.

Vegan Chocolate Coconut MuffinsDry Ingredients
- ½1 cups all-purpose flour
- 2 Tablespoon cocoa powder un-sweetened
- 1 cup shredded coconut
- ½1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
Wet Ingredients
- 100 gram dark chocolate broken into cubes
- ½ cup olive oil
- ½ cup sugar
- 2 cups un-sweetened plant-based milk
- 1 Tablespoon apple cider vinegar
- 1 tsp pure vanilla extract
- ½ tsp rum extract optional
- Place the oven rack in the second lower level, preheat the oven to 170 degrees Celsius – 338 Fahrenheit.
- Line the muffin sockets with paper cuffs (no more than 3 cm high)
- Sift flour into a bowl, add the rest of the dry ingredients and mix well.
- Melt chocolate cubes and olive oil in the microwave, transfer to a separate bowl, and mix well; add sugar, milk, vinegar, vanilla, and rum, and mix well.
- Transfer the batter to the pan and fill the sockets all the way. You can use a large cookie scoop (see photo at the beginning of the post).
- Decorate each muffin with chocolate chips.
- Bake for 30-35 minutes until a toothpick inserted in the center of the muffins comes out clean.
- Take out and cool on a wire rack. Allow the muffins to cool completely before removing them from the pan.
