
This recipe has been with me for years, evolving and improving along the way – and it never fails me! 💛
It’s incredibly easy to make and turns out light, fluffy, and delicious every time. You can whip it up as a quick side dish while preparing your main course, or turn it into a meal by adding peas, corn, and/or carrots.

✨ What You’ll Need:
- 1 cup jasmine or basmati rice
- 2 cups boiling water
- 1 tablespoon oil
- ½ teaspoon salt
- 1 tablespoon fresh lemon juice (optional but highly recommended for extra fluffiness and flavor!)

💡 How to Make It:
1️⃣ Rinse the rice thoroughly under running water until the water runs clear – this removes excess starch and ensures a light, fluffy texture.
2️⃣ Transfer the rice to a microwave-safe cooking dish with a vented lid.
3️⃣ Add boiling water, oil, salt, and lemon juice (if using). Give it a good stir.
4️⃣ Cover with the lid, making sure the vent holes are open to allow steam to escape.
5️⃣ Microwave on high for 12-15 minutes, depending on your microwave’s power.
6️⃣ Carefully remove the dish (watch out for hot steam!), fluff the rice with two forks – and that’s it! 🍚
⏳ In just 15 minutes, you’ll have perfect rice – no pot, no mess, no hassle!

RECIPE
Easy Microwave Rice2-3 servings
- 1 cup Jasmine or basmati rice
- ¾1 cup boiling water
- 1 teaspoon salt
- 2 tablespoon oil
- 1 teaspoon fresh lemon juice
Garnish
- toasted almonds or pine nuts
- Rinse the rice well until the water is clear without starch. Alternatively, you can soak the rice in cold water for about half an hour, rinse and strain.
- Put the rice in a microwave cooking pot (with a lid with holes).
- Add boiling water, salt, oil and lemon juice and mix well.
- Cover with the lid (make sure the holes stay open)
- 12-15 minutes in high power micro (depending on your microwave power).
- Open carefully (hot steam!), stir the rice with a fork or two. Transfer to a bowl and garnish with toasted almonds or pine nuts.
- You can add to the rice, along with the boiling water, a handful of frozen peas, corn, or carrots.
- For Indian-style rice, you can add one teaspoon of curry powder along with the boiling water.
- You can add to the prepared rice tofu cubes brushed in oil and seared on a pan.
