With Orange Red Wine And Spices
When the weather cools, the kitchen heats up with dishes and spices that warm the body and soul.
Since we already have two recipes for orange cake on the blog, I thought of a different concept: a cake with warming spices when Sangria popped up!

RECIPE
Sangria cake with oranges, red wine and spicesWhen the weather cools down, the kitchen heats up! This cake contains all the ingredients of Sangria: oranges, red wine, applesauce, and aromatic spices that warm the body and soul. A Light syrup adds extra flavor and moisture.
Servings
Ingredients
Kugelhof pan with a diameter of 20-21 cm (about 8-inch) well greased with vegan butter or coconut oil
Dry
- 2 cups white spelt flour or all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ½ tsp dry crumbled rosemary
- ¼ tsp ground cardamom
- ½ tsp cinnamon
- ¼ tsp ground ginger
- ¼ tsp nutmeg
- ⅛ tsp clove
- ⅛ tsp allspice
- ⅛ tsp anise
Wet
- ½ cup sugar by taste, see note
- 113 gram apple sauce, sugar free
- ½ cup olive oil, or sunflower oil
- ¾ cup fresh orange juice
- ⅓ cup red wine
- 1-2 tsp orange zest by taste
- ½ tsp rum extract optional
Syrup
- 2 Tablespoon sugar
- ¼ cup orange juice or apple juice
- orange zest* optional, see notes
Instructions
- Grease a 20-22 cm (about 8-inch) Kugelhof pan well.
- Preheat the oven to 160 Celsius, 320 Fahrenheit.
- Sift flour into a large, deep bowl, add baking powder, salt, and spices, and mix well.
- In another bowl, mix sugar, applesauce, oil, orange juice, wine, rum extract and orange zest.
- Add the flour mixture to the wet mixture and mix until combined.
- Pour the batter into the greased pan and bake in the center of the oven for 45-50 minutes until a toothpick comes out clean.
- Cool on a wire rack for about half an hour. Meanwhile, prepare the syrup.
Syrup
- Heat juice, sugar, and orange zest in the microwave until the sugar melts, and mix well.
- Turn the cake over on a plate, pierce it with a wooden skewer in several places, and pour the syrup over it. Allow the cake to cool completely before slicing.
Notes
The orange zest gives flavor and aroma. When it’s not baked, it has a slightly bitter taste, so adding it to the syrup is optional.
The cake is mildly sweet – for a sweeter cake – instead of 1/2 cup of sugar – add 3/4 cup of sugar – according to taste.
