Pomelo And Avocado SaladThe traditional salad gets a fresh facelift: pomelo and avocado join curly lettuce, red onion, radish, and strawberry. A rich vinaigrette wraps it all, while sunflower and chia seeds provide the crunch!
Servings
Ingredients
- 1 Ripe avocado cut into cubes and brushed with lemon juice.
- 1 Pomelo peeled and cut into pieces without seeds and the white skin.
- 1 red onion, finely chopped
- 2-4 Thinly sliced radishes
- 10 Medium-size strawberries, cut into quarters, or 20 fresh raspberries.
- 4-6 leaves curly lettuce Or a handful or rocket leavs
Dressing
- 3 Tablespoon vegan mayonnaise
- 2 Tablespoon olive oil
- 1 Tablespoon thick raspberry vinegar or half a tablespoon apple cider vinegar
- 1 Tablespoon lemon juice
- 1 tsp Dijon mustard
- 1 Tablespoon sugar
- salt and pepper by taste
For Serving
- 2- 3 Tablespoon roasted sunflower seeds
- 1 Tablespoon chia seeds optional
Instructions
- Mix the dressing ingredients in a bowl; add one tablespoon of water if the dressing is too thick. Taste and adjust seasoning if necessary.
- Put the avocado in a bowl. Cut the pomelo segments into two or three pieces by hand, add onions, radishes, and strawberries, and tear the lettuce leaves into pieces by hand and add them to the bowl.
- Sprinkle roasted sunflower and chia seeds, add the dressing, toss to mix, and serve immediately.
Notes
It is essential to remove the pomelo seeds – since they are bitter and may affect the taste of the salad.
The pomelo has a mild bitter taste, which adds a unique flavor to the salad. For a mild, sweet flavor – replace it with a grapefruit.
