Green Buckwheat Patties – No Buckwheat FlavorMix green buckwheat, vegetables, and seasoning in a bowl, form patties, roll in breadcrumbs, and put in the Air Fryer for about fifteen minutes. You get soft and juicy meatballs, crunchy on the outside and delicious. Great as a nutritious and satisfying lunch alongside mashed potatoes or in a sandwich 😋❣

Ingredients
About 25 patties
- 1 cup Green buckwheat soaked overnight washed and filtered
- 1 medium carrot finely grated
- 1 Onion, finely chopped
- 2 cloves garlic, minced
- salt and pepper
- paprika
- 2 Tablespoon parsley, chopped
- 3 Tablespoon tahini
- 3 Tablespoon olive oil
- 3 Tablespoon sweet white miso
- 1-2 tsp Korean red chili paste or something similar
- ⅛ tsp turmeric
- ½1 tsp salt by taste
- ⅛ tsp ground black pepper
- 1 tsp organic vegetable powder
- ⅓ cup sweet white rice flour
Coating
- 1 cup bread crumbs/panko cornflakes crumbs, or other gluten-free crumbs
- olive oil for spraying
To Serve
- Mashed potatoes, tahini dressing, vegan yogurt dressing
Instructions
- Put the carrot, onion, and buckwheat in a food processor. Process for a minute or two until you get a dry mixture. Add the remaining ingredients except for the coating, mix well, taste, and adjust seasoning if necessary.
- Transfer the mixture to a bowl, cover and put in the refrigerator for about half an hour to set.
- Set the Ninja Grill on Air Fry mode at 200 degrees C (390 F) for 16 minutes.
- Take about two tablespoons of the mixture; if it's too soft, add a little breadcrumbs or more rice flour – (add one tablespoon and, if needed, another one). Form round and flat patties with your hands, as in the photo.
- Roll in breadcrumbs or panko on all sides, press lightly, and place in the Ninja's basket, about 12 pieces at a time. Spray the top with olive oil and put it in the Ninja. (Meanwhile, make the second batch).
- After about eight minutes, open the ninja, turn the patties over, spray with olive oil, and continue cooking for another seven to eight minutes until the patties are nicely browned.
- Serve warm or at room temperature alongside mashed potatoes. You can dip the patties in tahini or vegan yogurt dressing (yogurt, olive oil, garlic, dill, salt, and pepper).
- These patties are great in sandwiches.
Notes
The meatballs can keep in the refrigerator for several days.
You can heat them in the Ninja or the oven. You can also heat them in the microwave for a few seconds, but keep in mind that the coating will lose its crunchiness and retain its juiciness.
If you can’t find Sweet White Miso, use a darker, more concentrated, and saltier miso. Start with one tablespoon and gradually to taste.
