Originally, this cake is made with oranges, egg yolks, and whipped egg whites. But ever since I started veganizing cakes, I’ve learned that whipping egg whites is often completely unnecessary! The combination of baking soda, plant-based milk, and apple cider vinegar works wonders, giving the cake a perfect rise and airy texture.

Since I had clementines in the fridge, I thought – why not try a new variation? So, I segmented a clementine, cut each piece into quarters (removing the seeds to avoid bitterness), coated them in cornstarch, and mixed them into the batter.
In one bowl, I whisked together olive oil, sugar, and applesauce, added plant-based milk, apple cider vinegar, and vanilla extract, then folded in the flour, baking powder, baking soda, and salt. A quick mix, and straight into the pan!

After 45 minutes in the oven, the result was a beautifully tall, fluffy cake with a crispy crust and juicy bites of clementine inside.
Enjoy every bite! 🍊😋❣
