Take a package of small potatoes (microwave potatoes), cut them lengthwise into thin slices without reaching the bottom, brush the potatoes with a mixture of olive oil, garlic powder, paprika, chili, thyme, salt and pepper, and place them on a baking tray that has been brushed with seasoned olive oil.
Cover with baking paper and aluminum, bake in the oven for 40 minutes plus an additional twenty minutes without cover, and the jewel of the meal is ready.

Hasselback Potatoes (Potato Fans)Take a package of small potatoes (microwave potatoes), cut them into thin slices lengthwise without reaching the bottom, brush the potatoes with a mixture of olive oil, salt and spices, 45 minutes in the oven with a cover, an additional 20 minutes without a cover. - 700 gram baby potatoes or a standard size potatoes
- ½ cup olive oil
- ½ Tablespoon garlic powder
- 1 tsp thyme
- ½ tsp paprika
- ½ tsp smoked paprika
- ¼ tsp chili flakes
- ½ tsp fine salt
- ½ tsp coarse salt
Instructions
- Preheat the oven to 200 degrees Celsius – 392 F
- Mix the oil, salt, and spices in a small bowl.
- Brush a baking tray with olive oil and sprinkle salt, pepper, and dried thyme..
- Using a sharp knife, cut the potatoes lengthwise into thin slices as much as possible without reaching the bottom – leave about half a centimeter.
- Arrange the potatoes on the tray with the cut side up. Generously brush the potatoes with the oil mixture, dip the brush in the oil accumulated on the tray, and brush the potatoes again.
- Cover with baking paper, place aluminum foil sheets over the paper, and close from the sides. Bake in the center of the oven for 45 minutes. Remove the baking paper and aluminum and continue to bake until the potatoes brown nicely—about twenty minutes.
- Transfer to a serving plate, sprinkle parsley leaves, and serve with a salad.
