Vegan Hard-Boiled Egg Spread

Unbelievable but true – this tofu spread tastes just like hard-boiled egg yolk! Blend all the ingredients until smooth, and store in a sealed container in the fridge. Great for sandwiches, vegan salads, or straight off the spoon.

Ingredients
 
 

  • 300 gram firm tofu, drained
  • 3 tablespoon oil canola, grape, etc.
  • 1 minced garlic
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon chilli powder optional
  • ¼ teaspoon black salt (kala namak)
  • salt and black pepper by taste
  • 1 teaspoon sweet white miso optional by taste
  • 2 tablespoon water add gradually

Method
 

  1. Put in the blender tofu, oil, miso, garlic, turmeric, chili, black salt, salt and pepper to taste. Process into a smooth spread - if necessary add water gradually as needed.
  2. Transfer to an airtight container and store in the fridge.
  3. This egg-like spread is excellent for sandwiches, vegan tuna salad, avocado spread, and eggplant mayo salad.

Notes

Tip: You can turn the spread into an egg salad by adding a little grated tofu to the prepared spread and mixing well.
