Vegan gyros pita wrap with tzatziki, arugula, tomatoes, and fries

Vegan Gyros

Greek Dream: Spread vegan tzatziki on the pita. Scatter tomatoes, hot peppers, and rocket leaves. Add sautéed Redefine pulled meat with onion and garlic. Top with fries and roll it up. Serve with a side dish of tzatziki.

Ingredients
 
 

To Serve
  • 4 Pita wraps or large Tortilla
  • vegan tzatziki
  • 12-15 Cherry tomatoes cut lengthwise
  • Green or red chili pepper cut into rings
  • Rocket leaves
  • French fries

Method
 

  1. Pour the oil into a large skillet or a wok, add the onion, and sauté over medium-low heat until the onion is caramelized. Add the minced garlic and stir-fry for a few seconds.
  2. Add the vegan pulled meat, incorporate the spices, and sauté for a few minutes.
To Serve
  1. Warm the pita wraps or tortillas in a dry skillet or in the microwave
  2. Spread tzatziki on the pita, leaving the edges clean. Scatter halved cherry tomatoes, hot peppers, and rocket leaves on top. Add the vegan pulled meat and fries.
  3. Roll up the pita and serve with a small bowl of tzatziki.
