Vegan Tiramisu Featuring Perfect Homemade Ladyfingers

This version honors the original! Luscious homemade vegan ladyfingers soaked in espresso, layered with a rich Tofutti-based cream and fluffy vegan whipped topping, finished with cocoa powder. The longer it chills, the better it tastes.
Servings: 8

Ingredients

Equipment

  • A deep rectangular mold measuring approximately 25 cm x 20 cm (8-Inch X 10-Inch)

Method

  1. Put tofu, sugar, vanilla, and orange peel extract in a bowl and whip for a few minutes until the sugar dissolves.
  2. In a separate bowl, whip the plant-based cream and combine it with the Tofutti mixture.
  3. Mix coffee and rum (liqueur or brandy) in a large bowl. Dip half of the Lady Fingers in the liquid on both sides for a few seconds, then arrange them in the pan. Pour a little of the espresso over the Lady Fingers.
  4. Spread half of the cream on the Lady Fingers, level with a spatula, and sprinkle a nice layer of cocoa powder on the cream using a small strainer.
  5. Dip the rest of the lady's fingers in the coffee mixture - and arrange on top of the cocoa-coated cream. Spread the remaining half of the cream and sprinkle another layer of cocoa powder.
  6. Cover with plastic wrap and keep in the refrigerator at least overnight to allow the tiramisu to set and develop flavors. It tastes even better after a few days—after about a week in the fridge, it will be truly divine.
  7. Serve with a large spatula or spoon.
