Energy Chocolate Balls Rich In Pea Protein Isolate

Isn't it cool that an energy snack can be a light, nutritious meal?
Here are two easy options: ultra-healthy energy balls, including cocoa mass and cocoa butter, or a bar of dark chocolate. Both versions contain Pea Protein Isolate. They are nutritious, healthy, and so delicious.

Ingredients
 
 

Fifteen Balls
  • 3 Large Medjool dates, pitted or four medium size
  • 1 Tablespoon tahini
  • 1 Tablespoon cocoa powder
  • ½ cup Pea protein isolate powder
  • 70 gram cocoa mass for substitute see notes
  • 30 gram cocoa butter see notes for substitute
  • cup maple syrup by taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon rum extract optional
  • ¼ teaspoon salt
Topping
  • Shredded coconut, sifted cocoa powder, colored candies, or roasted and chopped hazelnuts

Equipment

  • small paper cuffs about 1.5-inch bottom diameter

Method
 

  1. Put dates, tahini, cocoa powder and pea protein in a food processor.
  2. Melt the cocoa mass, butter, maple syrup, vanilla, rum, and salt in the microwave for about fifty seconds, mix, and add to the food processor.
  3. Process for about thirty seconds; stop the processor, scrape the sides with a spatula, close, and process for a few more seconds until the mixture forms a soft dough.
  4. Transfer to a bowl. Using a cookie scoop with a diameter of 3 cm (1.2 inches), form balls, roll in sifted cocoa powder, shredded coconut, colored candies, or finely chopped roasted hazelnuts.
  5. Place in small cuffs and keep in the refrigerator or freezer.
  6. Take out at least half an hour before serving.

Notes

You can replace cocoa mass and cocoa butter with 100g (3.6 oz) dark chocolate
