Vegan Orange Juice and Almond Muffins

Fluffy and addictive muffins: spelt flour and almond flour in the dry section; Orange juice, oil, and orange peel in the wet one. Easy and quick preparation - perfect texture!
After making these muffins once - they will become part of your regular recipe collection!

Ingredients
  

Dry
  • 1 cup white spelt flour
  • 1 cup almond flour
  • ½ cup white sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
Wet
  • 1 cup fresh orange juice
  • 2 tablespoon water water! not orange juice!
  • ½ cup sunflower oil, canola oil, or melted coconut oil
  • 1-2 teaspoon orange peel zest
  • 1 teaspoon pure vanilla extract
  • teaspoon almond extract optional

Method
 

  1. Preheat oven to 170 degrees Celsius. (338F)
  2. Sift the flour into a bowl.
  3. Add the rest of the dry ingredients: almond flour, sugar, baking powder, baking soda, and salt; mix well.
  4. Add to the bowl the wet ingredients: orange juice, water, oil, orange peel zest, vanilla extract, and almond extract; Stir until the mixture is combined.
  5. Transfer the batter to a muffin mold lined with cuffs (not less than a height of 3.5 cm - 1.37 inches).
  6. Bake 30-35 minutes until a toothpick comes out clean and dry.
  7. Remove from the oven and cool on a wire rack.
