Pasta in Red Bell Pepper Cream Vegan GF

You don't always have to work hard to get an excellent and beautiful dish out of the kitchen!
Cook whole red peppers in the microwave, clean from seeds, and process in a blender with olive oil, salt, black pepper, chili, and garlic. You get a velvety low-fat cream in beautiful bright orange color.
Add the red bell pepper cream to the pasta, garnish with pesto spread and basil leaves, sprinkle with vegan Parmesan, and serve.

Ingredients
  

Pasta - 3 servings

  • 400-500 gram Gluten Free Pasta Penne or any other pasta
  • salted water to cook the pasta

Red Bell Pepper Cream

  • 3-4 medium size red bell pepper washed
  • 2 cloves sliced garlic
  • 1 tsp olive oil
  • 1 tsp sweet paprika optional
  • salt, white pepper, chilli powder by taste

Pasta

  • Cook the pasta in salted water according to the manufacturer's instructions, strain and keep warm.* While the pasta is cooking, make the red bell pepper cream.

Red Bell Pepper Cream

  • Put the peppers in a microwave-proof saucepan, better with vents in the lid (Or cover with cling film and prick it with a fork.
  • Cook the bell peppers until they soften, something like 5-6 minutes, depending on the intensity of the appliance; after half the time, turn the peppers so they cook evenly. Remove and let cool.
  • Cut the bell peppers, open them and clean from core and seeds, and transfer them to a blender.
  • Add the rest of the ingredients to the blender: sliced garlic, olive oil, salt, white pepper, chili powder, and sweet paprika. Grind until you get a smooth cream; Taste and adjust seasoning if necessary.

For serving

  • Heat the pepper cream slightly (in the microwave or on low heat, stirring constantly); Put a portion of pasta on a plate, generously add the pepper cream, add pesto spread, sprinkle Vegan Parmesan, and serve.

Notes

To keep the cooked pasta warm:
Strain some of the pasta water into the pot. Place the colander with the pasta over the pot with the hot water and cover. Ensure the colander does not touch the water and that the pasta keeps warm only by steam. Place the pot on the swiched-off stove to accumulate extra heat.
